Well, the freelance rates at above sites seem much fairer than what the Indian tech companies are paying..However, i'm not sure if all of the above work gets done online ..?(other than documentation/tech writing) Would certainly be interesting to know how the communication happens in terms of requirements and typical business user to technologist interaction..!? over the net.. and access to database/appservers...

We have been working on RAC (http://palewar.com/rac) since last 2 years and it has been a very good experience so far. We bid on projects, buyer choose one of the bidders and transfers funds to escrow account maintained by RAC so nobody can cheat on anybody.
When you complete the project, buyer give you a rating and feedback which is then visible on your profile. All this is used by a formula to calculate your rank on site. We are ranked 250th on rent a coder among more than 1 lac coders from all over the world.
Site sends money twice a month by various options like cheque and wire among other. We use wire transfer as its fastest way to get money.
All the communication between the client and coder is onsite for record purpose and for resolution of disputes.
When we want to send our work or software code to client we upload its zip file on the site and thus it reaches to the client.
We now have many direct clients, but still about 40% of our revenue comes from RAC projects.
